Ingredients
- •2 tbsp olive oil
- •1 medium onion, chopped
- •2 cloves garlic, minced
- •1 cup carrots, diced
- •1 cup celery, diced
- •2 cans red beans, drained and rinsed (15 oz each)
- •1 can diced tomatoes (14.5 oz)
- •2 cups vegetable broth
- •1 tsp dried thyme
- •1 tsp paprika
- •1 tsp salt
- •1/2 tsp black pepper
