Ingredients

  • 1 cup dried pigeon peas, soaked overnight
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 15 oz can diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
