Ingredients

  • 1 1/2 lb white fish fillets (such as tilapia or cod)
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 1 medium red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 cup coconut milk
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • to taste salt and pepper

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Season the fish fillets with salt, pepper, paprika, and cumin.
  3. 3In a large oven-proof skillet, heat olive oil over medium heat and sauté the onion, red bell pepper, and garlic until softened, about 5 minutes.
  4. 4Add the coconut milk to the skillet and bring to a simmer, stirring occasionally.
  5. 5Nestle the seasoned fish fillets into the skillet, spooning some of the sauce over the top.
