  • 1/2 tsp salt
  • 1 cup ricotta cheese
  • 4 oz cream cheese, softened
  • 1 tsp vanilla extract

  3. 3Heat a non-stick skillet over medium heat and lightly coat with butter.

  5. 5Flip the pancake and cook for an additional minute, then remove from skillet.
  6. 6Place a spoonful of cheese filling in the center of each pancake and fold the sides over to enclose the filling.
  7. 7Return filled blintzes to the skillet, seam side down, and cook until golden brown on both sides, about 2-3 minutes per side.
  8. 8Serve warm, optionally with a dollop of sour cream or fruit preserves.

Chef Tips

  • For a fruity variation, add a spoonful of fruit preserves to the cheese filling.
  • Blintzes can be made ahead and refrigerated for up to 2 days before pan-frying.
