Ingredients

  • 2 lb beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 3 tbsp tomato paste
  • 4 large carrots, sliced
  • 3 large potatoes, peeled and diced
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour

Instructions

  1. 1Heat olive oil in a large pot over medium-high heat.
  2. 2Add beef cubes and brown on all sides, then remove from pot and set aside.
  3. 3In the same pot, add onion and garlic, sautéing until softened.
  4. 4Stir in the flour and cook for 1 minute, then add tomato paste and cook for another minute.
  5. 5Pour in beef broth, scraping up any browned bits from the bottom of the pot.
  6. 6Return beef to the pot and add carrots, potatoes, thyme, salt, and pepper.
  7. 7Bring to a boil, then reduce heat to low, cover, and simmer for 2 hours until beef is tender.
