Ingredients

  • 12 oz whole grain jumbo pasta shells
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 1 tsp dried Italian herbs
  • 1 egg
  • 2 cups marinara sauce
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. 1Preheat oven to 375°F.
  2. 2Cook pasta shells according to package instructions until al dente, then drain and set aside.
  3. 3In a bowl, combine ricotta cheese, 1/2 cup mozzarella, chopped spinach, Italian herbs, egg, salt, and pepper.
  4. 4Fill each pasta shell with the cheese and spinach mixture.
  5. 5Spread 1 cup of marinara sauce on the bottom of a baking dish.
  6. 6Arrange stuffed shells in the dish and cover with remaining marinara sauce.
  7. 7Sprinkle with remaining mozzarella and Parmesan cheese.
