Ingredients

  • 1.5 lb cod fillets, cut into chunks
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes, with juice
  • 1 cup fish or vegetable broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 2 cups baby potatoes, halved
  • 1 cup carrots, sliced

  • 1/2 tsp black pepper

Instructions
