Ingredients

  • 2 15 oz cans black beans, drained and rinsed
  • 1 cup breadcrumbs
  • 1 egg
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a large skillet, heat olive oil over medium heat and sauté onions and bell peppers until soft, about 5 minutes.
  2. 2In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
  3. 3Add sautéed vegetables, breadcrumbs, egg, garlic powder, cumin, salt, and black pepper to the mashed beans and mix until well combined.
  4. 4Form the mixture into 4 patties.
  5. 5Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side, until heated through and slightly crispy on the outside.
