Ingredients

  • 2 medium eggplants
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1.5 cups breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/4 cup olive oil

Instructions
