Rice & Mushroom is a comforting, easy-to-make dish that combines the earthy flavors of sautéed mushrooms with fluffy rice, making it a perfect plant-based protein and iron-rich meal.
Ingredients
- •1 cup long-grain white rice
- •2 cups vegetable broth
- •1 tbsp olive oil
- •8 oz cremini mushrooms, sliced
- •1 medium onion, chopped
- •2 cloves garlic, minced
- •1 tsp dried thyme
- •1/4 tsp black pepper
- •1/4 cup grated Parmesan cheese
- •2 tbsp fresh parsley, chopped
Instructions
- 1Rinse the rice under cold water until the water runs clear.
- 2In a medium pot, bring the vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender.
- 3While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the onions and sauté until translucent, about 3 minutes.
- 4Add the garlic and mushrooms to the skillet. Cook until the mushrooms are golden brown and have released their moisture, about 5 minutes.
- 5Stir in the thyme and black pepper, then remove from heat.
- 6Once the rice is cooked, fluff it with a fork and gently fold in the mushroom mixture.
- 7Sprinkle with Parmesan cheese and fresh parsley before serving.
