  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. 1Rinse the rice under cold water until the water runs clear.
  2. 2In a medium pot, bring the vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender.

  4. 4Add the garlic and mushrooms to the skillet. Cook until the mushrooms are golden brown and have released their moisture, about 5 minutes.
  5. 5Stir in the thyme and black pepper, then remove from heat.
  6. 6Once the rice is cooked, fluff it with a fork and gently fold in the mushroom mixture.
  7. 7Sprinkle with Parmesan cheese and fresh parsley before serving.
