Ingredients
- •1 cup dried lentils
- •2 tbsp olive oil
- •1 medium onion, chopped
- •2 cloves garlic, minced
- •1 tsp ground cumin
- •1 tsp paprika
- •1 tsp dried oregano
- •1 can diced tomatoes (14 oz)
- •4 cups vegetable broth
- •2 cups spinach, chopped
- •1 tbsp lemon juice
- •to taste salt and pepper
Instructions
- 1Rinse and drain the lentils.
- 2Heat olive oil in a large pot over medium heat.
- 3Add onion and garlic, sauté until fragrant and translucent, about 5 minutes.
- 4Stir in cumin, paprika, and oregano, and cook for another minute.
- 5Add diced tomatoes, lentils, and vegetable broth, and bring to a boil.
- 6Reduce heat to low, cover, and simmer for 25 minutes, or until lentils are tender.
- 7Stir in spinach and lemon juice, cooking until spinach wilts.
- 8Season with salt and pepper to taste before serving.
